I eat these crispy chicken and nori bites four or five days a week—and I’m sharing the 11 small habits that keep the chicken juicy, the seaweed crisp, and the filling firmly in place. I serve them with a cold, tangy salad for a meal with around 40 grams of protein per serving, ready in 30–40 minutes.
I show how I hand-chop chicken thighs without a food processor, mix the filling until sticky, and spread just the right amount onto dry nori. I also explain why I fry the nori side first, how I flip each bite gently, and how I check that the chicken is cooked through.
I bring it all together with my weeknight cooking sequence, plus a simple scrap soup and furikake for serving.
